Broccoli Recipes
 

Crisp Sesame Broccoli

Ingredients:

1 bunch broccoli (trimmed and cut into 2 inch pieces)
2 1/2 tbsp. sugar
2 tbsp. sesame seeds, toasted in oven
2 tbsp. oil
2 tbsp. vinegar
2 tbsp. soy sauce

Directions:

Cook broccoli in boiling water until crisp tender. Drain and keep warm. Combine the remaining ingredients in a large skillet and bring to a boil over medium heat. Add broccoli and toss to heat through, but not overcook. Taste for seasoning, correct if necessary and serve immediately.

Broccoli Casserole

Ingredients:

3 pounds broccoli, cooked
2 cups rice, cooked
21 ounces cream of mushroom soup
American cheese, sliced
salt, to taste

Directions:

Mix cooked broccoli, rice, cream of mushroom soup and salt together.

Spread mixture in a 9 x 13 pan. Arrange sliced cheese on top of mixture.

Bake at 350 F until cheese melts.

Broccoli, Bean & Pasta Salad

ingredients:

4 oz bowtie pasta cooked tender and drained
11 oz can mandarin oranges; drained
15 oz can garbanzo beans; drained and rinsed
1 large bunch of fresh broccoli; washed, trimmed and chopped
2 green onions; sliced thin

Dressing:

1/4 c white vinegar
1/4 c orange juice
1 tbs vegetable oil
1 tsp basil
1 tsp oregano
1/4 tsp minced garlic
1/4 tsp pepper

Directions:

In large salad bowl, toss cooled pasta with mandarin oranges and vegetables. In a shaker container combine ingredients for the dressing; shake to mix.

Pour dressing over the salad. Serve immediately or cover and refrigerate until serving time.
